Healthy Pizza for Kids

Once a week or so I ask the boys what they would like for dinner and invariably the answer is pizza. Amazingly enough, they are not talking about bought pizza full of fat and little nutrition, but about the homemade version I make with their help at home.

Base is just a basic scone recipe (either 1 or 2 cup) but add mixed herbs and parmesan cheese to dry mixture.

I split the dough into small lumps and squash onto a tray so the kids can each decorate their own, then use the remaining dough for the rest of the family. Our favourite toppings are Analoth Tomato Relish (this is the one ingredient I cannot do without in the kitchen) followed by cooked pumpkin, ribbons of zucchini (use potato peeler), bacon bits, chunks of feta, red capsicum and occasionally pinenuts. This is topped with a handful of Edam cheese and cooked in the oven at 220°C for 12-15 minutes.

So yummy, I even served it to a friend of ours who is an chef plus a lot of people have asked me for the recipe so………
