Healthy Breakfast for Kids – Pancakes

My boys favourite breakfast, which they would have every morning if I had time to make it that often…is pancakes. We have changed the recipe a little to give them a bit more nutrition and staying power.

Oaty Pancakes Recipe
Mix ¾ Cup of milk, ¾ Cup of Rolled Oats, 1 egg, pinch of salt, 1 -2 Tablespoons sugar, ½ Cup SR flour. Melt tiny dot of butter in medium frying pan, pour in mixture, turn when you see bubbles appear (the boys often stand near the stove and yell when the pancakes are ready to turn).

The Embellishments
Spread a light coating of Manuka honey over the pancake, top with sliced green or gold kiwifruit, banana and grated apple (with skin still on), sprinkle with sesame seeds, cranberries and sliced almonds or other chopped nuts. You now have a healthy and delicious breakfast ready to eat.

Special Occasions
On special occasions such as birthdays or Mother’s day, we cook letter pancakes and sprinkle with hundreds and thousands. The letters don’t usually look much like the teacher would have written them but the boys think they are fantastic.
